Wild Rice

Characters

This grass is distinctive in its height, sometimes reaching upwards of 2m. The pistillate flowers are terminal and stand erect. They also bear long awns. The horizontal staminate flowers are spaced well-below the pistillate ones. They are also awned. The leaves are broad, about 1.2cm across and have a very large ligule.

Used For

Wild rice grains require a longer cooking time than white or brown rice. Their flavour is superb, sometimes described as sweet and nutty. Generally grown in Manitoba by indigenous groups and sold throughout the country.

Recipe

Often favoured in rice mixtures, there are many recipes for its use in casseroles, stuffings and other savoury dishes.
