Characters

Becoming familiar to many as it quickly spreads via rhizomes. Weedy, with smaller flower heads than sunflowers to which it is related and resembles. Yellow staminate florets surround dark brown perfect flowers within. Disk measures up to 2cm across. Leaves are coarsely toothed.

Recipe

Gather the mature knobby tubers, peel and slice thinly or shave into salad. Slice and roast as potatoes; peel puree and mix with cheese into gratin.

Cautions

Some consider the unpeeled veggie as a source of gas. High in iron, potassium and thiamin. Good starch.
