Characters

Tall much branched shrub, reaching 1–1.5m. Leaves are diamond-shaped or elliptical, thin but leathery and covered with gold resin dots only on the lower surface. Flowers borne below the leaves are reddish in colour and their corollas are constricted at the opening. Fruits may be plentiful and are smooth and shiny black, with 10 seeds.

Recipe

Huckleberry Pie: make enough crust for top and bottom: 2 cup flour, 2/3 cup lard and 1/3 cup boiling water. Melt lard in water, then add flour. Lightly mix, form 2 balls and chill 30 minutes. Roll out: sprinkle crust in plate with 1/2 cup flour, add about 4 cups huckleberries, 1/2 cup sugar, a sprinkle of salt, and cover with top crust. Bake at 450˚F for 7 minutes, reduce heat to 350˚ F and bake 40 minutes or until done. Allow to cool and set before cutting.
