Leaves arise from creeping rhizomes, and may reach 30cm in length. Stems are stout and maybe just as tall. The white flowers have 4 petals which narrow to a claw. The raceme is leafy.

Used For

Roots are gathered and washed; peeled and grated. Then the gratings are soaked in vinegar, and salted. Bottled.

Cautions

Masks may be needed while peeling or grating owing to the mustard gas!
